The Daiquiri...Simple and Good.

Being a guy, I'm not into frozen drinks.  I find them annoying, over the top and usually really,really weak.  Most places charge 8 bucks for some wild concoction that usually has 1 shot of alchol or 2 shots....tops.    With that said, I love Rum.  I love how it was created in the Caribbean and other gorgeous locations.  It was discovered by plantation slaves from the distillation of sugarcane.  Genius. 

The Daiquiri was invented in Cuba around 1905, and originaly it was served on the rocks.  In the 1960's when entertaining became very popular, it became the frozen thing it is today.  The recipe I have listed is the original, and very simple.  Speaking of simple, you'll need to make Simple Syrup.

Simple Syrup:

Take 2 cups sugar and 1 cup water, bring to a boil on the stove for 3-5min.  I've found 4 min the optimal time.  Remove from the heat and let it fully cool in a glass container, I use a 2 cup measuring bowl.

The Daiquiri is best when made with Light rum. No need to use some $100 bottle,  I use Barcardi's Light Rum which for a 1.75L bottle, its 19 bucks.  Not a bad deal.  The most important thing you'll need is fresh lime juice.  Not the crap from a can or bottle.  I like to cut about 10 limes and squeeze them into a squeeze bottle and keep in the fridge ahead of time.  Trust me, don't cheat this one, it won't taste the same without the fresh lime juice.  Enjoy. Daiquiri:

2 oz Light Rum
1 oz Simple Syrup
1 oz Fresh Lime Juice

Mix in a shaker glass and serve over a few ice cubes.
